Mikrotik CHAT-LTE6 + Poynting XPOL-2-5G Performance Problems

Hoping someone can shed some light on this problem for me.
I live on a semi rural farm not too far from a city, so no fibre and the nearest LTE tower is 1.4 KM away. Providing internet to my house is 2 parallel LTE connections to the tower.
Initially these were both on ZTE MC801A but due to the RSSI hovering between -95 and -100, resulting download varying from 20-50 and uploads always under 10 Mbps.
To improve this connection, I have bought a Mikrotik CHAT-LTE6 and a Poynting XPOL-2-5G. Initial impressions were great, signal improved to mid to low -60s and upload up to around 20 Mbps.
The main problem is that the idle and loaded latencies are much higher, as well as incosistent.
here in the ubiquiti latency graph, the difference is night and day.

Usually the upload is higher on the mikrotik (15-20 Mbps or so) possibly the storm yesterday has something to do with it.

I am a little new to Mikrotik so maybe there is a configuration setting I am missing? The lte1 interface is set to passthrough to ether1 already. Firewall, nat and DHCP all disabled.
Please let me know if you have any suggestions.
