I feel a bit dumb, but what is the intended way of connecting the Ethernet cable through the seal?
The way I do it, just laying it on the seal leaves a gap open, and its quite big so I am afraid some Ants might get in.

You should be able to lift the white block and insert the cable under it and press it back into position with cable inside the "hole".

Depending on your cable size (if it is too thin), you might need/want to use some electrical tape around it so that it is pressed "tight".

In the video he didn't lift the block, but simply made a cut to insert the cable.
I was considering this, but would like to get a official answer how this should be done.
Ideally this would be documented as well of course.

I think the proper word is "grommet", that kind usually comes pre-cut, and (though it is black in the image) it seems like also the Mikrotik one is pre-cut:
