I think it's better that the AP does not have any IP during troubleshooting, to make sure it's not doing routing and that it's behaving as a simple switch.

Think about how much better cell phones work compared to wifi.
LTE will work down to about -115 dBm RSSI and with a -10 dB of SNR.
While WiFi requires a minimum of 10 dB SNR to maintain a connection.
That's a 20 dB difference, or about 10 times the range.

I feel like you'd get 10% more throughput on 5 GHz. From my own testing 802.11ax gives a bit better throughput than 802.11ac in PtP given everything else stays the same.
It certainly is possible to use both 5 GHz and 2.4 GHz at the same time.

This is a layer 4 problem. TCP and UDP do not support that out of the box. You could try using SCTP, which will give you redundancy. I have not seen other reports of similar issues with USB port of the Mikrotik Ax3, maybe you were just (very) unlucky?
Or you suspect that your particular device has a defect?
How to tell? It's still under warranty but I need some solid proof and testing is expensive.
