Try not setting AX nor N. Leave the band setting empty. It should default to AX with compatibility for N.However keeping AX for both wlan0 and wlan1 physical interfaces prevents setting N for any of them.
LTE will work down to about -115 dBm RSSI and with a -10 dB of SNR.Think about how much better cell phones work compared to wifi.

How to tell? It's still under warranty but I need some solid proof and testing is expensive.I have not seen other reports of similar issues with USB port of the Mikrotik Ax3, maybe you were just (very) unlucky?
