Just upgraded to v4.8 and again the NTP clients are stating "server-ip-mismatch" if I try to use my loopback ip address as the NTP server address.

Well that does explain it.

Are there any plans to add additional status or debug information to the NTP client to be a little closer to the SNTP client?

I just upgraded all Mikrotik devices to RouterOS 4.4 and the issue looks to be resolved.

I have found that the NTP client page in Winbox is different if the NTP package is installed. Why is this? Is there something specific about performing the upgrade with netinstall over an inplace upgrade that is/will cause additional problems?

Also what version are you expecting that has fixed this problem? RouterOS and firmware versions.

Why not continue running ospf? (I think you meant to say that you are running a PPPoE client at each client correct?) I take it that you will be running a routing protocol on each AP? Basically you are planning to try and use spanning-tree to try and reduce the time of convergence if a link bounces?...
