No idea why it stops working. I have run Splunk for years without it stopping by it self, always using Ubuntu Server. Maybe there are some other stuff/software on you Ubuntu that kills it. AP is non-mikrotik brand? What devices you plan to use? Encryption is the best solution, but need more details to suggest specific things
Different brands like EnGenius, Ubiquity, Ruckus....

I have never tried it but I think that you should create transparent proxy with parent proxy - the proxy from the ISP.

Do you mean that this revision cannot be fixes by software to use IPSec Hardware encryption?
