How if possible can I get my Mikrotik to work on a 48v managed POE switch utilizing the POE portion of the switch?

you can run rb800 off of 48V.

then you can have device like this: http://routerboard.com/RBPOE-CON-HP

that can convert 802.3af/at to non-standard 24V and power devices that does not require more power than 48V PoE can provide.

There is also this product from a company called Panoptic Technology http://www.panoptictechnology.com they makes several PoE compliant adapters including one that will step the voltage down to 24v for the Mikrotik.
