Backup and restore only DHCP LEASE and QUEUE part of config?

No spaces in names.

The script worked for a while. Triggered manually. Scheduled, it sometimes worked, sometimes didn't. Now it's completely broken again.

If you do that, then everything will be fine:

file=("$plik.rsc","$plik.backup")

Try to insert a :delay 5; line between the /system backup... and /tool e-mail... lines. It could be that recent RouterOS versions made the export or backup commands asynchronous, and the calls might return before the files are fully written to storage.

I use a delay of 1 sec and it works fine for years...
... but 1 or 5 sec is not so important.

I've tried different syntaxes for "file" command before, but they didn't work, unless I did something wrong.

I'm surprised the original script works without any tweaks on hap ac2. I don't know what it depends on.
