My mikrotik core router is also working as a DNS Server for my pppoe clients,
I want to activate CACHING on this Mikrotik, can someone please tell me or give me some easy manual on how to do this ?

Caching of what?
if you want to enable dns cache on router go to router. set up correct dns primary and secondary dns addresses under /ip dns, then there set allow-remote-requests=yes. Do not forget about securing your router.
