Would it be possible to feed a CRS112-8P-4S-IN with POE power from a CSS610-8P-2S+IN, and then attach other POE devices to the CRS112-8P-4S-IN ?

The CRS112 has no PoE in, so you would need a splitter.
But the CRS610 can output MAX (on one port) either 1A@30V=30W or 0.625A@57V=35.625.
The CRS112 will want some 10W, so you will have at most 20-25W available to power other devices, so, at the most, a couple access points or anyway low power 802.3af devices, provided that the cables between these devices are not too long and good quality, as some power/voltage will be reduced further.
