There's no reason why it shouldn't work. Did you paste it into the terminal between { } and see what errors it gives?

There's probably a failure elsewhere in the script. It's probably at setting the ip/dns upstreams and stems from the scoping of dns (in-built) and dns (local variable). It will probably work if dns is renamed to mydns, piholeip, etc.

Super weird, now it's working and I don't know why. Maybe a fresh session after a reboot? That's odd.

Question on this! How does the scope of DNS play a role, if the part that isn't working does not even use the $dns variable?

If some part isn't working, it doesn't always mean, that the problem is in this specific part. Even if some part of your code is perfect, it won't be executed, if there is a problem before this part.
