Does anyone have a case study of how to implement mikrotik aps on eduroam environment?
i work for a university that wants to try to implement the solution, but we dont know if works fine

all you need is a radius server, plenty guides on internet using freeradius to setup eduroam, what you drive behind that is irrelevant.
