First i think CCR is already stable than read it is a pre-production hardware, and there is a lot of complain in this forum abour CCR.
My company have about 3000 User and max internet connection about 300 Mbps, i only use it for bgp full route.
Is RB1100Hx2 is a already production hardware and stable ? is RB1100Hx2 a realistic choice waiting stable software for CCR ?
While I’d highly recommend the CCR you might want to hold off until RouterOS 6 leaves RC stages.
For the types of traffic you’re suggesting the simplest and most powerful in my opinion is a simple 1U rackmount server with 2 gigabit ports and 2-4GB or RAM. Install Mikrotik v5 onto there and move on with your life 
Your RB1100 AH is to small for this, im sure your CPU is always around 80-90%, with only static Routing. With Fullfeed you cant handle it.
Im using the smaller CCR without any Problems and can handle fullfeed BGP including Bandwith up to 600-700 MBit/s @ CPU on 20%.
