Hello first post ever.
On DHCP Server on the Leases tab is there a way to view a connected device’s uptime?

Nope.
What you see there is lease expiration time.

If you want to see uptime for connected devices, you need something like The Dude, or some tool using SNMP to query device uptime like NEMS, Zabbix, PRTG, … (and not all devices may support that possibility).

Of course it depends on what the connected device is. When it is a MikroTik device you can also see the uptime in IP->Neighbors.
And it depends on your requirements. When you want to know if it had recently connected you can use the “Last Seen” field in the leases.
