What I would do if I were you:
- run quickset on the SA choosing PTP Bridge AP
- run quickset on the other two devices, choosing PTP Bridge CPE
- use the instructions here:

and post the result of quickset for the SA and one of the other 2 devices, so that they can be checked. - then test the connection between the SA and one of the other two, and only once everything works, add the third one (which configuration should be identical to the other device, minus names and the IP addresses).
- doing the above, you will be able to become familiar with Winbox (advised as it can normally connect to the device(s) even via MAC, without needing an IP address)

I think (but has to be checked) that the quickset should already be creating the bridge and bonding for the interfaces
It may also depend on the exact version of Ros the devices are running, likely it is a 6.49.x version, which - once everything works as expected - you can upgrade to the latest “long-term” version 6.49.13.
There is (IMHO) no real reason to upgrade to version 7.x, for the use you have of the devices I don’t think you need anything that was added in v7.x..
