i mistakenly deleted ether1 in error and my cable is connected to it. now i can log undo the radio and it high on a mast. how do i restore it

Use neighbour viewer from another connected mikrotik device, and conect by mac-telnet to it, and restore what you did. I bet you disabled the interface, or deleted the ip address.
Reboot, and it will show up. If not, it’s something else wrong.
(USE CTRL+X from now on for you protection. It’s like a condom, somehow… It gets’ all the fun off…)

I don’t believe it is possible to remove or delete any ethernet interfaces, however, you can easily disable them!
if you type “CTRL+X” in command line, it will start safe mode. Type the same to turn it off when you are done configuring. What safe mode does - it undoes the last command that you made before losing connectivity. Try to enable safe mode, and then disable your ethernet. It will restore it.

But if you are trying to do many changes, you might get to the point where you get something like “not enough memory to undo changes” or something similar, and then the safe mode will drop you out, WITHOUT reverting the changes.
Can you please verify this, Normis ?
I got this while changing addresses on several interfaces, rb192 and also on PC, and enabling/disabling more than 512 simple queues, it dropped me out WITHOUT reverting anything. I had to rely on backup to do all the stuff back.
