As Network admin, and hardcore gamer 
, i would suggest you to use Mikrotik CPEs and nstreme. My network is all nstreme and i have no problems with latency, jitter and VoIP. You wouldn’t need the RB750 to client side because the CPE can shape whatever you need.
Routed Network with PPPoE on each site and centralized Radius are my 2cents.
And MPLS VPLS for virtual LANs
