DHCP v4 Servers show up in DHCP v6 Server Bindings. In a terminal, correct servers show up.

Name of the server. If set to all, then binding applies to all created DHCPv6 servers.
I upgraded to v6.1rc1 and wrong dhcp servers show up in Winbox and Webfig. As you can see in my screenshot, correct dhcp servers show up from the the terminal.
