In the past I followed[1], now my iPhone se1 IKEv2 works very well with both certificate and PSK on router hAP ac3 v7.19.2. When I replaced iPhone se1 by iPhone 16e in this year, it only works on IKEv2 PSK but not certificate.
Router hAP ac3 v7.19.2 (only firmware updated and the script shown in [1] unchanged)
iPhone se1 IKEv2: works very well for both certificate and PSK

hi, i dont know your config but i will give you this advice in my lil experience, if you use sha512 hash algorithm could give you some problems with some clients for example my iphone 10 (yes i know yo have a better iphone to test i but i dont...) cant connect so its better to use a lower hash like sha256, there are some combinations of encription, dh group etc that give some problems with some clients, in identity its the same if you have some config in my id or remote id can give you some problems with some clients, i will make a post with my config and somethings that i learn in the hardway...
