Can someone explain me the difference between
Wireless Protocol: nstreme
And “Enable nstreme” in the Nstreme section?
I can’t find anything about this!

The enable nstreme is no longer needed. In earlier versions the wireless protocol setting was not implemented.
So if I enable or disable it, what happens?
Who cares? Just let it disabled.
I guess it is used if wireless protocol is not set.

but I’m troubleshooting some wireless issue and i want to be sure about every single setting of my APs.
I’ll keep it disabled, but if someone from Mikrotik can help to understand what does it mean exactly it would be great!
