Do you know if there is repository of any sort where I could find customized GNS3 nodes customized for different Mikrotik models, preferably loaded with default configs?

You weren't paying attention:
ONLY the CHR exists in GNS3, no "models", SAME CHR renamed to the model name.
Default configurations you can get from tangent's website for several models, but it makes little sense anyway since parts of the RouterOS won't simply be available (Wi-Fi, PoE, etc.).
So other than the default config, which would need to be customized to the CHR (i.e., different than any models with a routerboard), the only other difference between CHR nodes is the number of network adapters?
I’m still trying to figure out when to use an e1000 nic and when to use a virtualized nic.
Go to your gns3 directory, check contents of folder "appliances".
It will be full of .gns3a files, sized 1 Kb to 10 Kb or so.
These files are essentially .ini files (though the format is slightly different).
They can be opened in a text editor just fine.
Compare (say) mikrotik-rb2011uias.gns3a against (still say) mikrotik-crs328-24p-4s+.gns3a.
What each line does should be largely self-explaining.
None were installed.
I see that I can install appliances from the GNS3 website, bt there are only about 11 MT devices including the CHR, RB2011xxx, RB2011xxx, RB4011xxx, RB450xx, CCR1036xxx, CCR1072xxxx.
I tried to install, but the process leads back to download the *.img.zip file from mikrotik.com
I’ll stick with the CHR for now.
In my opinion, it is best if you forget about router models. Just use any CHRs you need, with the desired network adapters.
Then, copy and paste the DEFAULT configuration if that is what you want. As an example,this is the default config that can be used as a home router with 6 interfaces.

You need to update this default config, it has a security vulnerability. The up-to-date rule now has dst-port=33434-33534. With the old condition, an attacker has access to all UDP ports of the input chain, he just needs to set the SOURCE port (that he can fully control) of the packets he sends to be within the range above.
This was buried in the changelog for v7.14:
