I’m trying to optimize WiFi performance on a MikroTik hAP device. The signal is fine but the actual throughput drops randomly, especially when multiple clients connect.
Does anyone have recommended settings for:
wireless channels
country regulatory settings
data rates
HT / VHT mode
security recommendations
Any tested configurations would be appreciated.

Which hAP in particular? There are many of them and I certainly hope you're not bothering with the original hAP.
Did you check (using an unrelated device) for possible interference in the area? Activity of other devices or wireless networks on the same frequency channel will affect performance of your own wireless network. In case of using 2.4GHz band, things are even more complicated if other networks use adjacent (partly overlapping[*]) channels as in this case interference avoidance is even more complex.
Also beware of hidden node problem where stations (wifi clients) of same AP can affect each other.
None of these problems are MT specific, but some vendors deal with these problems more successfully than others.
