Ive noticed this behavior recently. My users iPhones and iPads use our fqdn to connect to the exchange server. when they are actually in the office using wifi on the local network they don’t get any mail. when they are using their cellular connection they receive fine. what do i need to add or change to make this work both in and out of the office

try to make a static DNS entry pointing to your local server and be sure that your wireless devices use Mikrotik DNS…
For example, point myexchange.mydomain.com to 192.168.1.10 (local server IP)
