Is there a way to connect Groove 52 to LiteBeam 5AC-gen2?

As a university club, we want to do simultaneous image transfer from our UAV and we have Groove-52 and Litebeam 5AC gen-2. We are thinking of using Litebeam in the air and Groove-52 as ground station. We contacted the sales consultant but he said we can’t do it due to software differences. I’m asking just to be sure, if there is a possibility, we would like to evaluate it.

No. Both Mikrotik and Ubiquiti have proprietary protocols to provide better performance than regular WiFi, especially for PtMP setups. Whilst these extensions are optional on Mikrotik devices they cannot be disabled on the newer Ubiquiti devices, including airMAX AC ones.

Even if you could a LiteBeam would be a poor choice as it would have to be kept pointing accurately at the ground station. There may also be regulatory restrictions for airborne use of the usual WiFi frequencies depending on your country.
