unknown traffic is exactly that - NOT known, not identified by any rules. If you start identifyint it, it becomes known traffic
Please clarify what you want exactly. Do you want to add a new type of L7 matcher, that is not in the wiki?

OK, let’s start with “what is L7” and how it works. It’s just a string of symbols that RouterOS searches in packets, to match some traffic. There is not “supported list of programs”. You can define any string of symbols as a L7 rule. Search google for more known strings
