I need to create a fairly large number of bridges (possibly several hundred). Can anybody tell me if there is a restriction on the number of bridges which can be created? And at what license levels?

No, there is no limit to the bridge interfaces numbers, but you can add one interface to the bridge once.
Where do you need so much bridges?
We’re building something similar to a customised LAC, where we have a number of L2TP, PPP and PPTP tunnels terminating on the box, and each tunnel needs to be bridged to it’s own VLAN.
So, for each tunnel, I need a bridge which contains 2 ports, the tunnel, and the VLAN interface. I see that the limit on tunnels is 200, 500 or unlimited, depending on which license I buy, but I wanted to make sure that I didn’t run into a problem with any other licensing limits.
Yes, the limit is for tunnels is for level 4/5/6, there are 4095 VLAN interfaces per interface (physically), there is no limit for bridge numbers or ports.
