Any recommendations on logging statistics on my core edge routers (CCR) to something where I can analyze IP addresses and such to build a few reports around traffic, where it’s from etc? Some sort of open source solution or?
Check IP->Traffic Flow. You can forward to a collector like PRTG to log and analyze. Following was a recent ppt in MUM : https://mum.mikrotik.com/presentations/LB19/presentation_6352_1548734037.pdf
PRTG is not exactly F/OSS, but upto 100 sensors.
Or you could forward NAT logs to Graylog (less likely your requirement) and analyze them.
There is also another free tool build, I am not able to recollect, but you can search mikrotik forums
