i have to create a loop with switch mikrotik CRS112-8G-4S-IN connected in sequence mode. If between two switch the link is interrupted the network is not down and the route go in the other side. which protocol i have to use for that work?

Depends on what you are really after. If you want a bridge (VLAN) to stay available on either switch you can use spanning-tree. If there is routing involved there are a number of ways to do that, OSPF comes to mind as a quick and dirty way.
