My network installation is:
1 core router CCR2004 (OS v6) and 3 SWITCH CRS-254-48 (OS v6).
Can I upgrade the core router to V7 and continue with OS V6 on my switches?

Sure you can. Both v6 and v7 support (or are supposed to support) same standard protocols (with a few less important exceptions) so they should cooperate just fine if you don’t use anything overly fancy. The list of equipment you provided doesn’t ring any bell.
