If I have multiple DSL lines, say, and I want to (not sure if it’s the correct term) multiplex them together (join to seem as if they’re one) … is that the “bonding” function of mikrotik?

No, that’s not bonding in MT. If you had ANOTHER MT box on the other side of those two DSL/whatever lines and the bonding was performed AT BOTH ENDS then its the bonding feature of MT.
But if the two DSL lines provide gateways you need to setup Static Equal Cost Multi-Path routing (or something like it)
