Multiple utp pairs all together?

I would like to know if it possible to establish a reliable gigabit connection if I use a 40 pairs cable from one location to another. Before you say what the…? I can explain why it has sense. I have a 48 ports 1gbps switch + 4sfp+ in the first floor and I need to install 14 ports per floor (there are 5) but the think is not all of them need to be installed now, so I would like to install a patch panel per floor and when necessary run a cable from the patch panel to the right location. But I don’t want to use 14 (or 8,9) independent utp cables from each floor to the first floor. I would prefer to use a 28 or more pairs cable from each floor to the first one. Did I explain myself fine? Main challenge is to know if I will be able to get 1gbps per port. What do you think?

There are plenty of CAT5/5e/6 cables with more than 4 pairs. Remember the 100m segment limit too.
