How can I set a host in Netwatch Tool but with a certain source IP Address?
I think you need to rephrase your question, as i don’t understand it 
no it is not possible to set source for netwatch as it uses default routing to reach hosts it has to check. You can address this via scripting, examples you can look up here in the forums.
