Hi,
Can the OmniTIK 5 POE ac work fine as a DHCP server standalone or would you suggest running a router along side the AP like a hAP ac to dish out the IPs?

It will be just fine.

Any equipment that runs Router OS can do whatever you need. Only the question is, how much users, and how “fast” will it need to handle? If you plan to serve 1000+ users, then the Omnitik is maybe not the correct device. A CCR or a RB1100 is better in this situation.

But for a couple of users, it should be fine, if there are no difficult route tables.
