Hello,
I am looking for a PoE injector that will power the RB260GS switch. The RB260GS switch itself will be powered by an injector across an Ethernet cable instead of being powered by the external power supply.
Will either of these injectors work?

You can use any of them.
First injector is Gigabit. Sencond is 100Mbit
If you use gigabit POE, You can benefit from its use. But if you use 100Mbit POE, So that interface run in 100Mbps speed.
That is so so annoying!
Whe have currently 30 Switches in the field and have 80 pcs encamped.
We will immediately stop deploying them if Mikrotik is not able to stop this problem.
Stop what problem? Non-gigabit adapters not doing gigabit?
