By default Mikrotik CCr 1072 CPU work with 1000mhz speed, if i change speed to 1200mhz , do i face any issue? and why does mikrotik set cpu speed to 1000mhz by default when we can use 1200mhz for better performance?

Electronic equipment like to run as cold as possible, when increasing the frequency/ clock speed, the chip will run hotter and shorten its life
So your mean is if i run at 1200mhz, probably my device fail sooner? I want to put it in conditioned datacenter so airflow and etc ia fine
CPU producer marks CPUs with stock frequency with a reason. And the reason is that according to tests (and 6-sigma process) the CPU will run at stock frequency without a glitch for designed life-time.
If the same CPU is run at higher frequency, it might not run without a glitch (over-clocking tricks then need to be applied, such as cooling the chip well below normal operating temperatures, or rising the supply voltage or some other) or it might fail before end-of-life or something else. And when problems start, they might be due to some internal damage and running at stock frequency after that is not possible any more (hence one has to be careful when purchasing second-hand gear). So if rising frequency above stock value is possible it doesn’t mean it’s safe to do it, that’s up to device administrator’s responsibility (and expense).
Even running CPU at lower than stock frequency might cause some problems, but life expectancy should not get shorter because of that. The only benefit of running CPU at lower frequency is lower power consumption.
