Hi, i tested this issue and it appears on different routers and switches. It happened in 6.49.6 and is seen in 6.49.7 also. Connected with winbox.
When anything is modified in Quick set (hostname, dns, gateway, etc) in IP / Addresses will change the interface of main ip.
eg: if router or switch has ip 192.168.0.1 and interface is set as ether1, after clicking Apply and Ok in Quick set the interface will become ether2, or else. This results in losing connectivity with ip on the device!!!
This lead to a full blackout in my network, with some hours when no work was possible, until i found the issue.
While your assessment is correct, it is not a solution.

Yes, it is generally recommended to not use Quickset but that is because it has plenty of bugs like this one.
While it could be a useful tool for starters…
But after using it for a very first setup (starting on a DEFAULT installation !!), never use it again
It seems if wouldn’t be too difficult for MikroTik to set a “dirty” bit if the config was ever changed outside of quickset, and then make it very obvious that using quickset again will not do what you would expect.
In fact if quickset is used for the intial config, it would be nice if it changed skins to eliminate all the other options other than an “advanced features” that would warn the user that if this is used, there is no going back to quickset without a reset. At least if webfig is used. Most novice users are more likely to use webfig than download winbox.
The quickset feature is designed for noobs to get a relatively safe “consumer router like” initial connection. But there are no blade guards to protect the unsuspecting user that is used to working with consumer routers.
What I am envisioning: After reset either quickset or other options could be used, but once either method is used, then it should make it difficult to use the other options without ticking an “I understand, I know what I am doing”. So if someone wanted to use quickset for initial, then modify, it would still be possible, it would just require an acknowledgment of a scary sounding warning.

As mentioned numerous times around the forum, Quickset is a tool to be used only ONCE if you alter any settings manually after that.
If you use ONLY Quickset without modifying anything outside of the Quickset menu you should be ok to use it though.
Still, if the presented problem took you hours to solve.. meh.
Backup was ok, but finding why the switch dissapeard from IP range was the problem.
Admin who did this didn’t know Quickset is so nasty, me also.
Maybe a read-only mode by default in Quickset would be better, as a temporary solution. And users should tick some button to edit it, but with warning about unexpected results.
