I have a short question: I have a RB2011UiAS-2HnD-IN running with V 6.49.17 stable. I want to update it so V7. When I switch to the Upgrade-Channel in WinBox I am offered V 712.1. Am I right to update first to that version and then doing another upgrade to V 7.16? Or is my device not supported by higher versions than 7.12.1?

Yes, first change to Channel “Upgrade” and upgrade to that 7.12 version, after that, newer versions will become available.
RB2011UiAS is okay with v7
RB2011L series might be too slow, but you have the better model.
