I have a fan hooked up to the header on my RB493G. I was wondering if it was possible to control it manually or better yet since the 493G has a temperature sensor, it would be nice to control the fan using the 493G as a thermostat.
There is no too much you can control,
fan-mode – whether to use automatic fan failover (auto | manual; manual by default).
use-fan – which fan to use in manual mode (main | auxiliary; main by default).

Also, under winbox on the 493G there isn’t any options for the fan. I see those options under different routerboards but not the 493G.

Highly unlikely for RB493G. Maybe for different boards.
How about at least adding the standard fan control for the 493 G like the other boards have. It’s missing in winbox.
the more high end boards have more control, but they are also more expensive.
The standard RB433 and the RB493AH have the controls I am asking for. The RB493G has no fan control whatsoever.
I just checked. They also have the same two settings “fan-mode” and “use-fan”. What “control” are you talking about?
Those are the controls I am talking about. Under v5.6 using winbox, those controls are not available on the RB493G.
Yes, you are correct /system health menu is empty. We are checking the problem.
Problem will be fixed in the next RouterOS version for RB493G and fans control.
