RouterBOARD Emulator?

So my router board is set to arrive on Wednesday and I wanted to generate a config for it while it is on its way. Is this possible? I tried connecting to demo.mt.lv and demo2.mt.lv, but they appear to be read-only via winbox.

Are there any emulators than can emulate specific mikrotik routers, or is my best bet to set up a VM with a few NICs and install router OS on it?

Yes, they are called virtual machines and CHR images.

There are some other options as well.
