I am planning to purchase a MikroTik hEX Refresh 2024 and an hAP ac2 for my home network. I have a Sky Gigafast installation scheduled for January 20th.

Given Sky Gigafast’s potential limitations with bridge mode, what are the recommended approaches for setting up this configuration?
Are there any known workarounds or best practices for using a MikroTik router with Sky Gigafast?
Should I explore DMZ configuration, or are there other suitable options?
How can I effectively utilize DHCP Option 61 (if applicable) for client identification?
Are there any specific configuration examples or tutorials available for this setup?
Are there any potential pitfalls or compatibility issues I should be aware of before making my purchase?

Why dont you ask on the gigafast forums, this is a mikrotik forum ( note there are no gigafast specific settings on MT devices ).

If we talk about Mikrotik … why Hex Refresh and AC2 ?
Both limited in performance depending on what speeds you are planning to get (esp. Hex Refresh if you plan on using ether1 as WAN connection).
What speeds are you looking at ?

Why not AX2 ? Far more capable. Or do you need more ports ?
