Is there a solution to make UF-RJ45-1G from Ubiquti work on RB3011 or do I need MikroTik S-RJ01?

I had this same issue with some bare routerboards with SFP jacks. It was due to the SFP port being a software controlled port and I found only Mikrotik S-RJ01 would work in them. I suspect the RB3011 is also built with a software based SFP port.

If by “software controlled port” you nean “port wired directly to CPU” (as opposed to being wired to switch chip), then yes, RB3011 does fall in this category.
