Hi,
I have an Intel(R) Wi-Fi 6 AX200 160MHz on my ASUS motherboard , and I’m using a MikroTik hAP ax2 .
When the wireless mode is set to AC , it works normally and connects fine.
But when I set it to AX or Auto , the device doesn’t even connect or appear in the list of available networks.
I’m currently on RouterOS 7.20.1 .
Only switching back to AC solves the issue.
Has anyone else experienced this behavior?

Limit your AP to UNII1/2 (up to channel 124 iirc).
Most intel cards can't do unii 3.

My frequency is set to 5180 MHz (channel 36) , but I still can’t connect in AX mode — it only works when I switch to AC .

Then it's probably a different issue.
Is this just a problem with this ax200? Or other clients too?
Can you share a config? (Remove private information)

Perhaps it is your ax200 settings.
(On Windows 10)
Get to the network adapters page. (one way)
Control panel, Network and internet, view network status and tasks, change adapter settings
Choose the Wi-Fi adapter then properties
Up the top choose configure, then advanced, and go through the options available.
802.11n/ac/ax Wireless mode might be worth looking at.

I have another router in the shed at my house. I discovered that disabling its Wi-Fi makes my main router work again, even though my PC connects to this Wi-Fi with a signal strength of -85...

Update
I changed the channel on my other AC router from 5220 to 5745, (-85) signal and now my main ax2 (-39) router is working as it should. Thanks for your help, everyone!
