Tell me the correct network equipment connection diagram.
There are two Mikrotik Сloud router switch 317-1g-16s + and three Edgeswitch 48 500w.
Two Mikrotiks should have fault tolerance and routing, and the switches should serve the local network.
To be clear, the circuit is going to work with the ISCSI protocol. There are three servers (two ESXI and one SAN).
There are two SFP + ports on each server and one SFP + port is connected to each Mikrotik.
I roughly connected everything but the traffic is not optimal. Everything slows down. Help build the circuit and configure it correctly.

These 317 are switches, not real routers. Yes, they CAN do layer 3 routing - but they are SLOW doing it. Think about them as “smart switches that have a very weak router as bonus”.

He just told you. The switches you are using are not routers.
You need to put in proper routers if you need to route (not switch) traffic.
MikroTik switches, are not L3 switches. They may technically be able to do routing, but not even remotely close to wirespeed. Unless you want to route a few mbit/s, CRS won’t work properly. Look into CCRs or RB4011 for your routing.
