Using 2 chains to increase coverage?

Is it possible to use 2 45 degree 5ghz directional panel antennas each one with a single N Connector and point each antenna at different angles to cover a larger area? if for example it will be mounted in a Corner on a street pole, eact antenna will point at a angle from Each other Like a L, or can they be back to back from each other to provide coverage on a 1 way street to both sides.

That won’t work nicely, any MIMO radio is designed so that all (both) antennae cover the same area so that they experience same interference pattern.
In your case, the areas covered by each of antennae could have uncorrelated interference. This could mean even less air-time available. E.g. there’s an alien AP down the first street, operating on same channel as your AP. When that alien AP decides to transmit (or its client), your AP will command its clients silence on channel … and that will halt also clients on the perpendicular street which might be interference-free.

yes and best would be to use different polarization for each chain
if you have two antennas on both AP and client, simply rotate one 90 degrees to get different polarization.
