Hello I need to add some levels routed in my network. To continue using the vlans I’ll necessarily use EoIP or MPLS / VPLS? For me it is a new topic, Can you help me understand better?

VPLS would be the best technology for bridging layer-2 across a layer-3 topology.
However, you might take some time to consider using layer3 - as a broadcast area grows and grows, it tends to become more and more troublesome, so this might be a good time to take the plunge and use DNS / IP addresses in stead of broadcast to discover your things.
Also - sometimes multicast would make lots of sense because it can be routed throughout your network, but doesn’t require a flat network to exist everywhere, or be emulated by an encapsulating bridge.
