Not a book you can buy, but a free online useful resource that has a lot of information that is v7 oriented and reasonably well organized. One nice thing about it is that it is a "living document" that is being actively updated (at least as recently as Mar 29, 2026). So if there are errors or omissions they can be fixed. I only wish there was a way to notify the author when inaccuracies or dead links are found, but I didn't find anything on the site with instructions on reporting errors.
MikroTik RouterOS Documentation project The About This Project page says it was created by Sam Redfern but there is no contact info.
More of a reference than tutorial, although there is a lot more info and diagrams than is in the official MikroTik documentation.
There are some errors, (example: stating that the RB5009 has two switch chips like the RB4011) here when using the RB3011 and RB4011 would be more accurate.
But overall, it is a great resource, and I highly recommend taking a look. I have been referring users to it as a suppliment to other material.
