WiFi as WAN - System Design for many mobile wAPs

Hello all - I’m usually a UniFi guy but looking at MikroTik as a solution for a current project.

We will have ~60 cars that each have small SBCs (3) inside. These SBCs are used for data collection and media playback. When they return to dispatch location we want to have the SBCs sync data to our server, however the WiFi radio in the SBCs is weak and will not be useful here.

We plan to add a device to connect all 3 SBCs to and have that device handle the wireless from the car to the building from a roof-mounted RF transparent enclosure. Two of the SBCs can be wired to this device in the enclosure and one needs to be inside the vehicle using wireless connection. I was looking at the hAP AC Lite to utilize here.

The idea would be WiFi as WAN on the unit to make the connection to the building while providing connectivity between the SBCs within the car should they need it. Would like the unit to be issuing addresses to the SBCs so that it would make field servicing easy (connect to same wireless as interior SBC is using and reach all three SBCs from laptop).

First - does this device have the functionality? I have one that I bought to test and have been working on the WISP mode, but I’m wondering if this is not able to use the two radios for two different purposes (I assume 2.4ghz radio for transmission to building and 5ghz radio for transmission to the in-car SBC with it’s own SSID). In some threads I mentioned that it might be possible if the building units were also MicroTik, which is an option as that infrastructure has not yet been purchased.

Second - anyone know of a relevant walkthrough I can follow for these? I’m just getting my feet wet with MicroTik and am not familiar with the software. Was initially hopeful one of the quickset modes might be an option to handle this but that is likely not going to be the case.
