I successfully have Winbox 3.35 32bit running on me (with crossover on an Apple M1). But I can’t get the 64bit version installed. Should that also work ?
Also the high resolution mode does not work, here I can not change the window size/position.
Does anyone here have a similar constellation ?

It works great on M1 with wine64 bit version from here:
https://github.com/Gcenx/macOS_Wine_builds/releases/download/7.4/wine-staging-7.4-osx64.tar.xz
install the above, then get winbox64.exe, “open with” wine64
try if that works

I prefer crossover because of use for other Win Apps too 
Is there a difference in use of 32bit or 64bit Winbox ?

Not really.
So if your wine environment doesn't support 64-bit executables, just keep using 32-bit winbox.
