More info required. What are you trying to do. What version are you running. What hardware are you running.

HAP AC, v7.1beta2

When I create a new Route in IP -> Routes, I can no longer pick an Interface as a Gateway, nor can I use a Routing Mark.

its just public beta... half of things does not work and it is expected. You should not use it anywhere else than testing lab...

It seems that you can write the name of interface as gateway manually. And routing mark parameter is currently missing from WinBox, but it's in CLI.
