an interface list (there are two by default LAN and WAN) are useful constructs to use in various parts of the MT config, most notably in firewall rules, to identify one or more interfaces for directing/blocking packets.
a vlan is a virtual lan, think of it as a another LAN subnet that runs on top of other subnets but is invisible at layer 2.
one doesnt really need vlans unless you have multiple subnets that need to run over a single port.
