VPN slow

Hi everyone, I'm a Microtik newbie ... and inexperienced at complex networking/routing but I'm getting there!
I am using a hAP ac lite to provide access to a remote network via a L2TP/IPsec VPN and the performance is poor. I know this type uses more processor power than PPTP but PPTP seems not to work with my ISP - and its not very secure but it only seems to use about 8% processor power, so I'm not sure why its so slow.
I have speed tested via nPerf and the bandwidth doesn't seem too bad but latency is over 1000mS
Is there some way I can speed this up?
Also, when its working better, I would like to set one of my WLANs and Ether2 to use the original internet on Ether1 the other WLAN and remaining Ether3 etc. on the VPN. How do I go about this? Using VLANs?
